One of my favorite memories of Christmas time is baking cookies with my mom and sister. We would spend a whole day mixing, baking and decorating so many different types of cookies. My favorites are Neiman Marcus Cookies, Italian Pizzelles and M&M cookies. 

It's tradition that I make Neiman Marcus Cookies with my mom every year. And only my mom has a Pizzelle maker. So last night I tackled the M&M cookies! I adapted them from this recipe. They are fail proof, so a great option to bake if you need to bring cookies to a party or to give as gifts-they always turn out perfect. All due to one secret ingredient, Instant Vanilla Pudding!

Ingredients: 
  • 1 stick unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • 1-1/2 cups all purpose Gold Medal Flour
  • 3 tablespoons Instant vanilla pudding mix
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 3/4 cup mini chocolate chips
  • 1 or 1-1/2 cups Mini M and M’s
  • Pink Himalayan Salt for sprinkling 
Directions
1. Preheat oven to 350 degrees F. and line a large baking sheet with a silpat liner. I use a Air Bake cookie sheet, they are the best! 

2.In a large mixing bowl cream your butter and sugars until combined. Add egg and vanilla and combine. Add flour, pudding mix, baking soda and salt, stirring to combine. Mix in min chocolate chips and m&m’s.

3. With a medium cookie scoop, place dough 1 inch apart from each other on silpat. I sprinkle a little bit of Himalayan Salt on top right before baking. It gives them the best salty but sweet taste! Bake for 10-12 minutes or until just browned around the edges. They will keep cooking a little bit as they cool! Let cool on cookie sheet until cool enough to grab and put in your mouth! Transfer the remaining cookies to a cooling rack to finish cooling. Makes 24 cookies.

*Seriously, buy a Silpat and Air Bake cookie sheets. They make a huge difference and I don't bake cookies without them!
